My friend Kathryn asked me (about a DECADE ago) to come up with a recipe for a brekkie bar for her footie mad son. So roughly about 5 years ago I did …..ok so, not so much 5 years but about a month ago and I just never got round to posting the recipe.
As usual the requirements were a) easy peasy & b) no fancy stuff that I need to trek to the Himalayas to source – just supermarket shelf stock here.
So here it is Kathryn & Ben. I hope you enjoy!!!
Ingredients:
1 cup of Dates
1 cup of Oats
1 cup nuts (almonds, cashews)
2 tablespoons of Maple syrup
3 tablespoons of Tahini
1/2 cup of each of the following Sunflower Seeds, Pumpkin Seeds
1/4 cup of each of the followingSesame Seeds, dried fuit (cranberries, raisins)
Pinch of Salt
Method:
Preheat oven to 180C.
Line a 8 X 8 tin.
Simmer the dates in 1 inch of water for 8 minutes. Blitz in processor of nutri-bullet with the maple syrup and tahini.
Toast the nuts for 8 minutes in the oven and chop. Add to the date mixture.
Add the rest of the ingredients and mix well.
Press into tin and bake for 20 minutes – until it starts to look golden on top.
Leave to cool a little and remove from tin – slice while still warm.
Enjoy whilst kicking a ball, playing dress-up, doing your shopping – where ever takes your fancy.

Ps. They can be quite crumbly! I use the left over bits in tin as granola.
