It’s normally about this time of year that the contents of my garage start to spill out onto my lawn. An Irish Pandora’s box of sorts….dragged from its winter slumber, dusted off and dumped into the paddling pool for a quick wash by those under the legal driving age who reside with me.
Come the end of the first week of July and the tennis racquets take centre stage (Dad joke alert – it would have been a crime against fathers all over the world if I ceased to take advantage of such a golden opportunity to crack you all up….hmmmmm). With Wimbledon in full swing, we create a little SW19 in our own back garden.
Somewhere in between retrieving balls from our neighbours gardens, roof’s, gutters & my un-repenting desire to be Steffi Graf, a Wimbledon ball girl and Andre Agassi’s towel, there needs to be some snack breaks. In this heat, the cooler the better!
Here is a super simple, tasty & healthy mid match favourite. Tennis starts with love. Lets inject a little love into the middle too.
Ingredients
30g Cashews*
3 tbsp greek youghurt
150g blueberries
Juice of Half a lime
1 tsp vanilla extract
1 tbsp ground flaxseed
A handful of Ice if you are using fresh blueberries.
*I don’t pre-soak my cashews as my blender is very powerful. However you may need to soak for 6 hours in 100ml of water or alternatively pop into boiling water for 15 mins before adding them.
Method:
Put all your ingredients into a blender and whizz until smooth.
Super simple!
