Chicken Wings on the cheap and cheerful

One of my kids came home from school this week with the exciting announcement that someone had a new baby. Cue loads of ‘Ooohhhhs’ and ‘Aaaahhhhhs’ from every one in the car. 

Except from 4th born.

He simply wanted to know what flavour the baby was. 

Stiffling my giggles amidst the utter confusion that followed, I reassured everyone that no one intended to eat said baby. And that we didn’t know if it was a boy flavoured baby or the girl variety.

Conversations from the backseat rock huh? Conversations that make you happy, sad, confused, tired and sometimes bring you right back to simpler times when everything was black or white, right or wrong and just less confusing in all.

In all this daily rushing, dashing & general life confusion it’s good to stumble upon something simple, that’s for sure. By the time the weekend rolls around you need things to be uncomplicated, manageable & fairly straight forward in everyway. I love to cook up a storm on a Saturday night following a morning and afternoon of ferrying children to their various social and sporting appointments. When I pull into my dive-way, car laden down with various sporting paraphenalia, bits of astro turf, gumshields,  several Freddo wrappers from multiple party bags & about 30 half empty water bottles, I need to know I can cook up some sort of exciting movie dinner with out exerting myself too much.

Step forward Sticky Chicken Wings.

The hero in the ring on a Saturday night round ours on many an occasion. Packs enough punch to feel like we are eating out. Satisfying enough for all little pickers (ok I lie…..one of my kids won’t touch chicken wings in general but 3 out of 4 ain’t bad). Effortless and uncomplicated

Ingredients:

20 chicken wings

50ml soy sauce

75ml maple syrup

2 tbsp mustard (I used Dijon – any will do)

50g sesame seeds

1 tbsp olive oil

1 tsp chilli flakes (optional!!!!!! – leave out if the kids hate them)

Method:

Using a sharp knife of scissors cut the wind tip off your wings and discard. Then cut through the remaining joint on the wing so you are left with 3 pieces for each wing. 

Mix all your ingredients together and pour over the wings in a baking dish. Cover and leave in the fridge until you are ready to cook them a few hours later.

Uncover the wings and mix them. Place in a pre-heated oven at 200C for 20 minutes. Then turn down to 180C and bake for a further 20-30 minutes. The cooking time will depend on your dish also. In order to get the wings nice and sticky you should mix them up from time to time. Keep an eye on them but bake until they darken and the sauce thickens nicely.

Serve in a bowl with plenty of water dishes to wash sticky hands.
