I have a serious nut butter addiction! I could quite literally eat it straight from the jar. And that is fine once you are burning the calories it provides. It’s good fat and all that – but you’ll still get a huge calorie hit from it. So eat it and keep moving – that’s my mantra.
My latest experiment turned out quite delicious so I’m going to share it with you all. And as usual it ticks all the time starved boxes we need it to tick. You can make this whilst doing all the usual mundane tasks you undertake during the day – changing nappies, washing bottles, supervising maths, opening vino…..oh sorry did I write that there? Freudian typing slip. Ahem.
This here, my friends, is a thing of both joy & beauty.
You do need a powerful blender/processor though – otherwise you don’t get the texture you require.
Ingredients
180g Hazelnuts
250g Almonds
1 tablespoon Chia Seeds
30g Dessicated Coconut
3 Dates (medjool or delegat noir)
Pinch of salt
Method:
- Roast the nuts on a tin for 10 minutes in a pre-heated oven (180C)
- Roast coconut for 5 minutes on separate tin.
- Leave to cool for 10 minutes (relax, breathe, have a coffee!)
- Put all the ingredients (nuts/coconut included) into a blender and whizz for 10 minutes.
Store it in an airtight jar.
And enjoy on apples slices, toast, celery sticks, straight off the spoon……

Mmm, this looks so good! I’ve been finding it hard recently to get nut butters with all clean ingredients in my supermarket so delighted with this recipe!
