I’m not averse to diary. In fact I hold nothing at all against anything bovine if truth be told. It’s just my days of downing a pint of milk with my dinner are behind me. But who am I to judge? Rest easy – I don’t. But I am more of an everything in moderation kinda gal.
And why cashew nuts?
Cashews are a good source of healthy dietary fats. These healthy fats include monounsaturated fats & polyunsaturated fats. They are good for the heart & help reduce bad cholesterol (LDL cholesterol) if consumed in appropriate amounts. They are also a good source of magnesium, which is vital for the healthy development of bones, muscles & organs. Magnesium helps maintain blood pressure, boost the immune system, maintain the nerve function, and keep bones strong. Cashews provide phosphorus, and are a source of dietary iron.
Little creamy nutty powerhouses huh?
Cashew Nut Milk
3 cups fresh water
1 cup cashew nuts.
Soak the cashew nuts in the 3 cups of water for 4-6 hours (or over night).
Rinse nuts off and pop them into blender with 3 FRESH cups of water. Blend on high until combined.
You should not need to strain the nut milk (unlike when you make almond or hazelnut milk).
This will give you 3 cups of Cashew Milk.
Slick Strawberry Surprise
The kids are convinced this is shop bought strawberry milk. Who am I to tell them otherwise?
Ingredients:
1 cup Cashew Nut Milk
8 Strawberries
1/2 tsp Vanilla Extract
3 dates
Cool Chocolate Companion
This is my absolute favourite – it’s like drinking a chocolate mousse. Now I’m a dark chocolate kinda’ gal so this is strong. If you prefer you can lessen the amount of Cacao you use.
Ingredients
1 cup Cashew Nut Milk
3 dates
1 tbsp raw Cacao
Whichever milk you are making they method is the same and super easy. Just pop the ingredients in a blender and blitz them up until smooth.
I like to do it like this as I then have milk for my coffee leftover. Plus you also get to mix up the flavours as requested!
And as I do with my smoothies every morning, if there are leftovers just freeze them into pops. It’s a whole other world!!
