For those of you who have not heard of Madeline Shaw, you are missing out. Her healthy recipes are generally quite simple to make. And in this busy world, simple is not only good…..but essential!
Below is her recipe (as promised!) for Gluten free, grain free, refined sugar free Flapjacks.

Ingredients
150g Pecans
150 g Hazelnuts
150g Almonds
150g Dates
150g Sunflower Seeds (I used mixture of Sunflower & Pumpkin)
1 tbsp Cinnamon
1 tbsp Ground Ginger
1 banana (over ripe)
1 tbsp Maple Syrup or Manuka Honey
30ml Coconut Oil
Pinch of Salt
Method
Put Pecans, Hazelnuts & Almonds into blender and whizz into flour like powder.
Add the rest of the ingredients and blend – you need a pretty high speed blender for this to work properly.
Put mixture into a tin lined with baking paper. I rubbed a little coconut oil around edges too. The tin size was not specified in the recipe so I used a 8 inch square one.
Bake at 180C for 20-25 mins until golden on top.
Slice and enjoy straight away.
I have been microwaving them all weekend as they are great warm!!
