Hello Winter!!! The clock change is beckoning and so are my winter woollies, warm socks, fluffy jumpers & comfort food! What is better than a big bowl of warm porridge oats for brekkie? It’s healthy and filling! But there are other ways to indulge with oats in a quick, delicious fashion too – have a look!
So your college days seem like a dim & distant memory by now. Well that’s most likely because they are!! Mine are anyway – that’s for sure. But those long, cold nights, beating a hockey ball around a plastic pitch until well past starvation point is etched into my mind forever!! You come home deep into Stage 2 Hanger…….. so forget the frying pan, I’m too broke for the chipper & my Mum is miles away – let’s seek comfort in the Coco-pops.
There wasn’t anything much more comforting than the solace found at the bottom of that bowl back in the day. But now the thought of them have really just lost their appeal. And this makes me sad. But it doesn’t mean there aren’t options in the slovenly, lazy eating department, best enjoyed in a hurry and if really lucky…… in bed!
Best enjoyed here……but anywhere will do! How nice is this Yawn Clothing nightie? My 1st nightie in years and it’s got pockets! That in my book is winning. #MomsArmsAlwaysFull
But here is a healthy alternative to these refined sugar laden chocolatey rice pops. There may not be any rice in the recipe but the sticky, sweet, cocoa hit does the job just aswell and with none of the guilt.
So here is my version of Guiltless Chocolatey Peanut Butter Overnight Oats
And what’s more? It is ridiculously simple to make, takes no times and can be shipped to the office, gym, sofa as it travels impeccably! And of course, the whole lot can be bought in your regular supermarket – no time for multiple stops here!
Ingredients:
1/2 Cup of Oats
1/3 Cup of Greek Yoghurt
1 Tbsp of Maple Syrup (optional)
1 Tbsp of Flaxseed
1 Tbsp of Chia seeds
1 Tbsp of Raw Cacao (or regular cocoa)
1/2 Cup of Milk (of choice)
2 Tbsp of Peanut butter (my choice is Whole Earth Peanut butter – but any with no added sugar is good)
1 Tsp of Vanilla Extract
Method:
Place all the ingredients in a bowl and mix thoroughly.
Transfer to large jar with lid.
Store over night in the fridge.
Enjoy!!!
