It’s a little embarrassing calling this a recipe. It’s almost too simple to merit the title. However because of the week that’s in it I felt it was worth popping up here. It’s not often you get Valentines Day and Pancake Tuesday side by side…….if that’s not enough to merit chocolate then I do not know what is!!
And besides, life is too short for complicated 600 ingredient recipes. This here is an alternative to the well known shop bought, processed Chocolate Spreads. Pick a good quality chocolate and be happy in the knowledge that you are serving up a chocolate delight that is most certainly a more nutritious treat for all to enjoy.
Ingredients:
200g Almonds
60g dark choc chips (I use 55% to 70% cocoa)
Pinch of sea salt
Method:
Roast the Almonds for 8 minutes on a tray at 180C in a pre-heated oven.
Tip them into your food processor with the chocolate chips.
Alternate method:
Using chocolate pieces in place of the chips – simply melt the chocolate first and add to the nuts.
Add the salt.
Blend for 5-10 minutes. Scrape down the sides half way through.
Note: Blending time is machine dependant. Also your mixture will look dry and crumbly firstly. Then the oils of the nuts will get released and it will form a nutbutter as it should look. Just keep blending until you get this.
Enjoy slathered on pancakes, apple slices, each other, melted over ice-cream – there are no rules here folks.
