These kids are quite literally eating me out of house and home. I can’t keep up. The plague of the
locusts tearaways. And who actually made fruit so EXPENSIVE??!! I am the mother who picks up stray blueberries from the floor and rinses them under the tap. I’ve even been know to pick them from a bowl of uneaten porridge and rinse them off for later use – yes that was a particular low but at cost per berry a gals gotta’ do what a gals gotta’ do.
One thing I have learned in the past few years is that generally speaking it’s just cheaper to make stuff yourself….especially the fancy stuff. Don’t get me wrong, I’m always happy to pay for convenience but a little effort can mean the difference between can and can’t. It can also mean the difference between healthy versus something that appears healthy but really isn’t all that when you read the label.
And I have five happy guinea pigs here to be trying out all that fanciness on, don’t I? Cough, ahem….well 4 really. Husband is……shall I say…..resigned. Pick your battles and all that. There does sometimes appears to be an almost trepidation and weariness about him as he walks into the kitchen after work. He has been known to say things along the lines of:
“Oh tonights one was interesting alright”
“You won’t be putting this one on Instagram anyway” (on this occasion he didn’t read the signs correctly and my obvious delight at how I combined these random ingredients in such a way that the dish was IMO delicious was mistaken for me smirking at the fruits of my labor – needless to say he hasn’t offered
“Jaysus if you served that to my brother he wouldn’t know what to do with it” (proceeds to take out camera and WhatsApp said brother my culinary delight for that day – cur racous laughter in a North Kerry household)
Oh but more fools them eh? The same man has lost a fortune of weight by simply eating less processed food over the past 3 years. So he may laugh and take the proverbial……..but he wouldn’t go back.
I randomly purchased a pack of Quinoa flakes a little while back – its great for using in place of breadcrumbs on fish and chicken. However I was never going to use it all in this way so decided that I’d have a go at adding it to my favourite meal of the day. And from this my Lemony Quinoa Granola was born. It’s great sprinkled on smoothie bowls or even with milk and eaten like cereal. The kids hound is on fruit bowls yoghurt on top. Just remember to omit/chop the nuts accordingly depending on how old they are. I cannot keep granola in this house – it flies off the shelf and knowing you can control the amount of sugar in them makes it so worthwhile. Mine, as a rule of thumb, never have refined sugar in them. Happy days.
Our usual granola recipe can be seen here but if you fancy a change….kinda like we did…..
Have a go and see what you think. It’s got Hubby’s approval……at least I think it does…..maybe he’s too scared to say otherwise LOL
2 cups Quinoa Flakes
3 cups Oats
1/2 cup Almonds
1 cup of any combo of Pumpkin/Sunflower Seeds/Sesame Seeds
1/2 cup Cashew Nuts
Pinch Sea Salt
Juice of 1 Lemon
75ml Maple syrup
6 tbsp Tahini
3 tbsp Coconut Oil
Ingredients to add after when cool.
Raisins/Cranberries/Dried banana slices
Pre-heat your oven to 180C.
Combine all the dry ingredients in a large bowl – give them a quick mix. Add you lemon zest straight to this bowl too.
Combine all the wet ingredients in a pan and warm until coconut oil is melted and everything combines.
Pour wet ingredients from pan into the bowl and give the combination a good mix.
Bake on a tray with liner for 25-30 minutes. Give it a little mix up halfway through.
Leave to cool COMPLETELY in the tin and once cool add your dried fruit and seal in airtight jar.
Don’t let the whole Tahini thing put you off – what is it? It’s similar to nut butter but made from sesame seeds. Nearly all supermarkets stock it. No running to Mars for it then. It’s also high in calcuim, Vit E, B1, B2, B3 and B15. Winning….. as the young ones say!
I like to serve it on acai bowls as a topping or on a fruit bowl with yoghurt. The kids DEMOLISH these. Guilt free brekkie or dessert! Some times I just pop some in a snack bag and take it to snack on dry. And occasionally I eat it like a cereal with cold milk. Simple can be best! Just don’t eat a tonne!
Breakfast tomorrow morning doesn’t have to be sugar laden cereal – give it a go!
