Peanut Butter Hummus in a Hurry for the Hangry

Dear World,

I would like to present my Peanut Butter Hummus in a Hurry for the Hangry. Why I hear you cry?

I suffer greatly from Hanger. That is why. And every problem needs a solution.

Hanger? You know? When you are so hungry that your lack of food causes you to become angry, frustrated, irrational, unreasonable, ever so slightly more crazy that normal or all of the above. I am prone to bouts of complete lunacy when in a state of Hanger. And it is at these times that I am most likely to be found at the bottom of a freshly opened bag of chocolate buttons (Fun Friday’s Movie night treats swiftly demolished by Wednesday…..note to self: buy more and it’ll all go away) or having an argument with the washing machine over why it keeps spitting out more clothes for me to dry, fold and put away (Inanimate objects have a soul…..right? If I shout at it, it will listen. Surely?

I generally am good with breakfast and dinner – most likely because at these meals I have other people dependant on me for nourishment. Lunch however is a different story. Somewhere in between fixing lunches for the under 10 year olds residing chez moi & piling days worth of knickers, socks, school uniforms and dirty sports gear into the soul-less washing machine, I sometimes forget to prep’ a lunch.

And sometimes I don’t notice until it is about 5 minutes past the cut off time that I need to leave the house for the school run not to be stressful. However I am often still arguing with the aforementioned souless washing machine at this time but this really is neither here nor there.

But whoa there boys and girls, let’s focus on solutions and not problems here. From this precise predicament was born my Peanut Butter Hummus in a Hurry for the Hangry. In true Mum style it’s more about bunging and blitzing in 5 minutes – anything that keeps me out of the biscuit tin or from eating my kids leftovers out of their lunch boxes (all time low – has happened – desperate times)

It is super easy and super healthy with your basic supermarket ingredients!

1 can of Chickpeas

2 Cloves of Garlic

4 tbsp of Peanut Butter

Pinch of Sea Salt

3 tbsp Lemon Juice

2 tbsp Olive Oil (Extra Virgin Olive Oil here is best)*

4 tbsp Greek Yoghurt.

  • The Olive oil is not cooked in this so you will really taste what you put in. For recipes like this it is good to use the best type of Olive Oil that your purse will allow. However I wouldn’t be losing any sleep over it either – bung in what you have otherwise.

Add all the ingredients to your blender and blend until smooth.

Transfer to dish and garnish with olive oil, paprika, chilli flakes or what ever takes your fancy.

Serving suggestion:

Bread sticks, celery sticks, sliced red or yellow peppers, carrot sticks, crusty roll, straight from the spoon……there are no limits or rules here folks.

It makes a perfect lunch box snack too with a portion of breadsticks at the side. Just don’t send it to school if nuts aren’t allowed. Or omit the peanut butter and add more yoghurt in it’s place.

Your’s, eyeballing the washing machine,

Cli x
