Breakfast in our house can be such a stressful time as it’s normally chaos. Leisurely would certainly not be a word I’d use to describe it but survival in the morning really depends on keeping things easy & being prepared as much as possible. I rarely skip breakfast as the one thing I have learned over the years is that if I don’t eat it 2 things happen:
1) I morph into the crankiest woman in Ireland;
2) I snack like a beast!
So when I don’t feel like have a smoothie from my beloved nutribullet, I sometimes make this Chia Breakfast pudding. It’s very simple & is like having dessert for breakfast with the added benefit of Chia being high in nutrients, antioxidants, protein, fibre but low in calories. Plus you can grab the jar from the fridge & eat it with granola or fruit purée on top in the office or car…..wherever!
4 tbsp chia seeds
1.5 cups almond milk
1 large mashed banana
1/2 tsp pure vanilla extract
1/2 tsp of cinnamon
Any seeds/nuts of choice. I used sesame & pumpkin seeds with flaked Almonds. Thrown them in a frying pan and toast on medium heat for a short while. Keep an eye in them.
This is so simple it barely needs words!
Measure your Chia & mashed banana into a container.
Add your cinnamon & vanilla extract (I used vanilla bean paste).
Add the Almond milk. Mix. Leave overnight in fridge to bulk up.
In the morning I just scoop what I need from the jar into my bowl, toast my nuts/seeds and add them on top.
A sprinkle more of cinnamon & my sweet tooth loves a squirt of agave on top!
This is really delicious!!! You can share or keep the other portion until the next morning. It’s a big hit in my house ….. 3rd born is savage for it. Quite literally!
