Roast Strawberry Pops for Roasting Hot summer Days

 Katy Perry inspired this sudden frenzy of Popsicle making. It started out as a normal, run of the mill morning – nothing special…..gym, rushed breakfast, chaotic school run all whilst forcing down a good 500mls of water. There’s nothing like a few fine lines to motivate me into a bit of H2O guzzling. A good start is half the battle, isn’t that what they say?

Feeling pretty smug about the state of affairs in my house and head (I could see the toy-room floor, the washing machine was working its magic and there was no sign of the elephant on it’s soap box in my head roaring obscenities at me for failing at a life’s little jobs), I flicked on the radio & there she was!

Oh-oh-oh-oh-oh, oh-oh-oh-oh-oh-oh-oh

Well how could I not?

Suddenly the summer clothes I had professed to clearing off the spare room bed and hanging appropriately melted from my brain like said popsicle and my mission was clear. WE NEED A NEW FLAVOUR FOR THE WEEKEND. 

Let the fun begin. Simple, not processed, fun, full of food substances and names that you and yours actually recognise and pretty to boot! What’s not to love about a Roasted Strawberry Popsicle?!

Roasted Strawberry Popsicles

Ingredients

  • 500g Strawberries sliced
  • 2tbsp Maple syrup
  • 1/2 teaspoon vanilla extract
  • 300 gram plain yogurt 
  • 100ml Milk

 

Or try this Dairy Free version also

  • 500g Strawberries sliced.
  • 2tbsp Maple syrup
  • 1/2 teaspoon vanilla extract
  • 1 400ml can Coconut milk (I use full fat)

 

Method:

  1. Preheat oven to 180C degrees. Grab an oven proof dish,
  2. Mix the strawberries and maple syrup together and pop onto your baking dish.
  3. Bake for roughly 15 minutes. It’s ready when your strawberries are bubbling and look soft. Leave them to cool completely.
  4. Spoon a heaped tablespoon of your strawberries into your moulds.
  5. Puree the rest of the strawberries in a blender with the rest of the ingredients. 
  6. Pour into ice lolly moulds on top of the whole roasted strawberries.
  7. Freeze for at least 4 hours until solid.

Enjoy with or without Katy Perry, whilst plotting your next move.
