Is it just me? Am I the only one who cannot hear the word tropical with bursting introvertedly into the opening lyrics of this Wham favourite – sometimes I even open my mouth unwittingly and emit the opening bar or 2. Which would most certainly be unrecognisable & only serve to cement whoever is in earshots suspiscions that I am indeed a) crazy, b) sleep deprived or c) choking.

Alternatively maybe I am just showing my age here!

I allowed myself the pleasure of dancing around my kitchen last week belting it out at the top of my lungs safe in the knowledge that the 2 metres of insulating wall the builder insisted we needed (for the artic conditions of Cork City) would ensure the neighbours wouldn’t think I was being strangled. Aptly I was dressed for the Bahamas also – again the insulating wall. Any of my post kiddie friends who arrive to our house leave worrying that they are experiencing their 1st serious hot flush indicating their ovaries are indeed shutting up shop such are the sweltering conditions of a well insulated home. And my mother normally arrives up dressed for the Canaries. But I digress…..again.

What was the inspiration for such 1980’s equatorial behaviour, I hear you ponder?? It was quite simple this. Ice Lollies.

Tropical, Creamy, Dreamy Smooth Ice Lols with a tiny citrus kick right at the end – just enough to make you want to hide them from your kids come back for more. The whippersnappers quite literally could not get enough of them.

Guilt free treats?? Step this way please:


1/2 cup frozen pineapple

1/2 cup strawberries

1 frozen sliced banana

Juice of 1/2 Lemon

2 tbsp honey,

Roughly 1 cup of Milk ( depending on your moulds you can adjust this as preferred – you will need less if you use fresh rather than frozen fuit)


Simply pop all the ingredients into you blender and blitz them until smooth.

Pop into ice-lolly holders of choice and freeze over night.

Don’t wait for the sun to shine to enjoy these delights. If you do you risk an empty freezer
