Why did the crab blush? Cos the SeaWeed!

Ok so I know that my sense of humour is somewhat prepubescent  – but I bet you giggled!!

  
(Sunday – 9.45am: 3rd born asleep in buggy, 2nd born digging a hole to “Engerland” (no questions please – I am aware), 1st born on sleepover, Supervalu Coffee & Choc Croissant. I AM IN HEAVEN.)

And why, pray, would I entitle my post with this joke giving reference to seaweed? Well because last weekend I was immersed in the stuff. Sadly not literally……as the thought of a seaweed bath in Ballybunion sounds extremely appealing…..but figuratively as I attended & had the pleasure of hosting a session in the Atlantic Seaweed Festival.

On Saturday morning I hosted a discussion & tasting session in McMunn’s Bar & Restaurant. I was quite nervous as I had never done anything like this before and out of the comfort of your kitchen where the mess is easily hidden & disregarded, I worried that things had the potential to descend into utter chaos. A bit like my day to day existence really.

  
On top of that I had never really spent a lot of time in a working kitchen with my own station  – where they were prepping for lunch & I was generally trying (and no doubt failing) not to annoy them all with my gazillion questions.

Where is the knife?”

“Do you have a cloth?”

“Where will I put the waste food?”

“On a scale of 1 to 10 where would you rate me on the annoying scale now that I’ve been here 5 minutes?”

  

But thankfully they were all very patient & helpful. And so I did a demo for an hour where I made Almond Milk, Horchata Smoothie, A Seaweed Smoothie (for fun!), Cashew Nut Butter & Cacao Coconut Balls (bit hit!!). Everyone had a taste & I did promise to post the Cacao balls recipe…….so here it is

  
Cacao Coconut Balls 

Ingredients

1 cup raw seeds or nuts – own choice

1 cup desiccated coconut

2 tbsp cup cacao

1 tbsp coconut oil

1tsp vanilla extract

¼ tsp salt

1 cup medjool dates

4 tablespoons of almond butter

¼ cacao nibs

Coating – sesame seeds, dessicated coconut.

Method:

Whizz nuts/seeds & coconut.

Add cacao, vanilla & salt, almond butter & coconut oil.

Add chopped dates a bit at a time.

Add nibs.

Roll into balls & roll in coating.

Freeze for 30  mins.

Enjoy with a cuppa tea. These are my favourite so far!

If you wanted to add hemp to these for extra protein that would work also.

The rest of the weekend was spent digging holes on sandy beaches & I’m still reminiscing about an amazing steak I had in McMunn’s. 

   
   
I’m planning a return already….. If only we could guarantee the weather!
